Funny Things

Where I've Been

Hello all! Long time, no blog. But, in my defense, I've barely even had time to eat during the last two weeks.  This blog isn't the only thing that's been neglected.  Just look at my laundry hamper!:

Every surface in my room is covered in dust because I haven't had time to go to the store and get dusting cloths (On a similar note, I also don't have any milk for breakfast tomorrow.  Sad, sad situation.)
My dishwasher sat full all weekend after I ran a load of dishes on Friday.
And my desk is a cluttered, useless mess.

And (possibly worst of all), my Pinterest account hasn't seen any action in days!

What has everything fallen into disarray?  Well, I've been a bit busy.  First of all, last week was midterms week at school.  And then on top of midterms, I was off at Baton Rouge Little Theater playing dress-up and having fun.

This past Friday, A Funny Thing Happened on the Way to the Forum opened at Baton Rouge Little Theater.  I am playing Tintinabula, the loud, jingly, air-headed courtesan.



We've had a great weekend of shows, but before we could open, we had a busy weekend of tech rehearsal. So last week, if I was either in class, at the theater, at work, or studying.


If you were smart, you wouldn't miss this show!  It's pretty hilarious, if I do say so myself :) If you like comedy, dancing women, men in short dresses, or any combination of the three, this show is for you!  You can read an article about it that was published in the local newspaper, The Advocate, here.

Tickets for the show are available online at www.brlt.org or by calling 225-926-6496.  Tickets are $27 and worth every penny!  The shows are selling well, so you definitely want to get your tickets ahead of time to make sure you can get good seats!

Now that the show's open and midterms are over, the hard part for me is done.  I will (hopefully) have more down time, which means more blogging. And dusting.  I desperately need to dust. Whee!

Oh, and if any of you with a smart phone play Scramble with Friends, FIND ME AND PLAY WITH ME!  This game is my newest addiction and I need new opponents.  My username is EmCaroline1.  If you're friends with me on Facebook, you can find me through that as well.

But in the meantime, this busy week has left me exhausted, which means it's time for me to crawl into bed with a box of Thin Mints and finish watching Despicable Me.  I hope that all of you have a great Monday!

Fill-In-The-Blank Friday

Sup, peepsters?  Once again, it is Friday, and once again,  I am so glad it is.  This week has been super busy.  I had a test and 2 assignments due this week, plus A Funny Thing Happened on the Way to the Forum rehearsals really started picking up.  The only time I got this week to just sit down and not do anything was the 15 minutes I had to stay at the doctor after getting a shot!  But "busy" doesn't mean "bad."  In fact, this was a good week!  And I haven't been able to say that in a very long time.  

So, without further ado, let's get to the fun! Time for....

1.  The highlight of my week was taking an impromptu trip to my alma mater, Baton Rouge High School, to visit the choir. Choir was a big part of my high school experience and I didn't realize until I got to college how much I took that for granted.  They have a very good program at Baton Rouge High, once that I think rivals most university choirs.  I didn't think I would miss it as much as I do, so it was really nice to go back for a quick visit and hear some of the stuff they're working on now.

2.  If I had to classify my interior design aesthetic, it would be broke college chic? Haha.  My apartment is pretty small right now and I'll only be there another year and a half, so I haven't really gotten much of a chance to spread my interior decorating wings.  But I think I've done well with what I've got.  It's homey and welcoming.

3.  My first vehicle was (and still is) a 2010 Pearl White Hyundai Sonata.  I love my car.  It's perfect for me and my style.  And it's got satellite radio :D.  I plan on driving this car until I can't get it out of the driveway anymore!

4.  An item I need to have in my day in order to function is chapstick!  I freak out if I don't have any chapstick with me.  I especially love the Eos Lip Sphere, but any brand will do.  Right now, I'm using one that was a promotional item from the COMD department at LSU. I got it for answering a question right in class :)

5.  My favorite way to waste time is in bed. Pajamas, laptop, and tv on.  Brain turned off.

6.  Right now I could really go for some Thin Mints.  Lucky for me, I have some :) 
Oh, and someone to carry me to bed.  Because right now I am so full from a huge dinner at Chimes East that I can't move.  *Reaches for another Thin Mint*

7.  This weekend, I will be in tech rehearsals for A Funny Thing Happened on the Way to the Forum at Baton Rouge Little Theater!  We really do have a great show and you definitely don't want to miss it! We open next Friday (March 9), but we also have a Pay-What-You-Can Performance the Thursday before.

Deep Dark Chocolate Cookies

Remember when I told you about these amazing cookies and promised to share the recipe? And, in true Emily fashion, I didn't.

Yeah, oops.  This post has been in my drafts box for three weeks.  FAIL.

February has been totally, out-of-my-mind crazy.  Between school, theater, and my body deciding to stop functioning properly, my brain's a little fried.  Deep thoughts and proper sentences are not happening.  But a picture's worth a thousand words, right? And I have lots of pictures!

So, for those of you who are just joining us, let me catch you up:  At the end of January, a few friends and I had a girl's night! We all went to my friend Charlynn's house and watch the SAG awards.  We all brought either a soup, salad, bread, or dessert to share.  I brought Asian Salad and these cookies.

These were a little bit more work than your average cookie recipe, but they were so worth it! They were ever so slightly crunchy on the outside and chewy on the inside.  And so rich and chocolatey—Perfect with a glass of milk! But be warned, don't breathe in while eating your cookie.  I learned that the hard way. 

Another thing I really like about this recipe is that it's gluten and butter free, so my friends with those dietary restrictions could enjoy them too! 

These were a hit at SAGs night :)

I wish I had remembered to take a picture of my food before I ate it all! Tomato Basic Parmesan Soup, Sausage and Lentil Soup, Caprese Salad, and Swiss Poppyseed Bread.  It was all so good.

*Fun Fact: It took me 5 tries and a google search to figure out how to spell "parmesan."

Deep Dark Chocolate Cookies
*Recipe found on www.divine-baking.com

  • Nonstick vegetable oil spray
  • 1 1/2 cups bittersweet chocolate chips (about 9 ounces), divided
  • 3 large egg whites, room temperature
  • 2 1/2 cups powdered sugar, divided
  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  1. Preheat the oven to 350°F.  Spray 2 large baking sheets with nonstick spray.
  2. Melt 1 cup chocolate chips in a glass bowl in the microwave, stirring twice.  (About 2 minutes) Cool slightly.
  3. Using an electric mixer, beat egg whites in a large bowl to soft peaks.  Gradually beat in 1 cup powdered sugar.  Continue beating until mixture resembles a soft marshmallow creme.
  4. Whisk 1 cups sugar, cocoa, cornstarch, and salt in a medium bowl to blend.  On low speed, beat dry ingredients into the meringue.
  5. Stir in lukewarm chocolate and half cup chocolate chips (dough will become very stiff.) Note: My dough didn't become very stiff.  I think thick might be a better word)
  6. Place 1/2 cup powdered sugar in a bowl.  Roll 1 rounded tablespoon of dough into a ball. Roll in sugar, coating thickly. Place on a prepared sheet.  Repeating with remaining dough, spacing 2 inches apart.
  7. Bake until puffed and tops crack, about 10 minutes.  Cool on sheets on a rack for about 10 minutes, then place the cookies directly on the rack and let them cool completely.
Makes about 18 cookies.



Oh my goodness, I need a cookie now!
