Super Cheese Sunday

Another  Pinterest recipe success!

At this very moment, I am sitting next to my father and we are making a pretty big dent in some warm bean dip! It's just so....cheesy. Here's the original pin:



This was one of the very first things I pinned when I started using Pinterest.  But it's definitely a recipe that calls for an occasion and a group of people to share it with.  And, frankly, it screams "Super Bowl Snack!"  I mean, what's more "Super Bowl" than a dip that calls for FOUR CUPS OF CHEESE?!

Sidenote: I just relocated myself across the room because that is the only way I am going to stop shoveling this dip in my mouth.

I didn't go to any sort of Super Bowl party this year, but my parents and I went to my grandfathers house to "watch it" (I say that like I'll have any clue what is happening in the game...) and eat junk food—perfect time to try this recipe!  

Another Sidenote: Relocation did me no good.  I just walked across the room and stuffed my face some more.


It's a really simple recipe.  Mix some stuff up, cover it with cheese, pop it in the over, bada bing!  If you can open a can and open a bag, you can make this recipe. Unfortunately for me....

Apparently I've been using the can opener BACKWARDS for 20 years!  Add this to the list of things I can't do properly because I'm a lefty...

And...

Whoever is responsible for putting that little "Tear Here" notch in bags of cheese has it out for me.

But, I prevailed and ended up with this:

You gotta love a recipe that looks like this!

Mix everything up, pop it in a pan, and cook for 20-25 minutes.  Take it out, cover it with even more cheese, and cook about 5 minutes longer.  

Perfection.


AND if that wasn't enough cheese to get your arteries sweating, then take a gander at this:


Basically, my mother is a genius.  She took my favorite cheese (Brie) and wrapped it in crescent rolls.  And it's the definition of amazing.  The saltiness from the brie and the slight sweetness from the crescent rolls are perfect together.   To make these, just wrap a small wheel or a wedge of brie cheese (we used La Bonne Vie brand) with crescent rolls and bake according to the directions on the can of rolls.  Easy.  Breezy.  Delicious.

In general, I don't enjoy eating that much.  There are very few foods that are worth the calories or the resulting stomach ache to me.  But this dip and the brie and crescent rolls?  Totally worth it. There's just something about cheese...

Now, if you'll excuse me, I need to take a tums, run a marathon, do 1,000 sit ups, and make friends with the veggie tray.

Warm Bean Dip
*Recipe found on "The Country Cook"
  • 2 cans (16-oz.) refried beans (I used fat free)
  • 1 can (10.5-oz) diced tomatoes (I couldn't find a 10-oz can, so I just used 14-oz.  It worked just fine)
  • 1 Tablespoon taco seasoning
  • 4 cups colby jack cheese
  1. Preheat the oven to 325 degrees.
  2. Drain excess juice from the tomatoes using a strainer.
  3. In a medium bowl, combine refried beans, tomatoes, taco seasoning, and 2 cups of cheese.
  4. Spray an 8x8 dish with cooking spray.  Pour combined ingredients into a dish a spread around evenly.
  5. Bake for 20-25 minutes until thoroughly heated through.
  6. Add remaining 2 cups of cheese and bake for another 5 minutes until cheese is melted.
  7. Serve warm with your favorite tortilla chips.
*You can have fun with this recipe!  Try it with Rotel tomatoes or use mexican style or pepperjack  cheese.  Tweak it to your taste.

She's Back!

Hello interwebz!  After a busy week, I am back and blogging!

My finals schedule was rough this year.  I had one on Wednesday, THREE on Thursday, and one today. Luckily, the highest grade I needed to make on any of the finals was and 82. I've gotten 2 grades back so far....A's!  Woohoo!


To keep myself sane this week, I baked and made cake pops!  The process is such that I could spread it out over the course of the week.  I would explain it to you, but every time I make them people go so nuts over them that I like to "keep it a secret recipe" (even though all you have to do is google "How to make cake pops" to learn how to make them...but you didn't hear that from me).  I've made cake balls before and have really been wanting to try to make them as pops, but haven't really had an excuse to make them until now! Tonight was the opening night of A Christmas Carol at Baton Rouge Little Theater!  I'm not going to get a chance to go see the show, which I feel guilty about because I know and love several people involved in it.  So I decided to make up some cake pops to send over as an opening night treat!  I thought the "pops" part would also be better for a theater group because they would be less messy to eat than cake balls (less risk for chocolate on costumes).  I think they turned out really great!  I hope the cast/crew/creative team enjoyed them!


 I wrapped an old box in some Christmas wrapping paper to make a more festive container :)


I'm so happy with how they turned out! And I got to see a couple of friends that I hadn't seen in a long time when I delivered them tonight, which was a great plus!

I als0 got a chance to celebrate the end of finals with my family tonight!  My grandfather's birthday was in October and my parent's promised him a steak dinner for it!  But schedules are hectic and life is crazy and we didn't get a chance.  So tonight, my parents, my grandfather and I went out for an end of finals/Birthday dinner at Ruth's Chris Steak House! Yum!  And it was a great excuse to dress up!

And then I finished off with cheesecake, the leftovers of which are waiting for me in my fridge!  That will be a nice treat for tomorrow :)

I'm a cheesecake purist.  Don't put anything on it! Just give it to me plain! 

It was a fantastic dinner!  Everyone deserves a Ruth's Chris dinner every now and then!

So what's up next for me now that this semester is over?  Well, this weekend I am excited about getting a manicure (I really need one), getting some laundry done (I'm running out of clean underwear) , going shoe shopping (Hooray for DSW Rewards Certificates!) and getting started on playing Zelda: Twilight Princess (It's been sitting on my shelf mocking me for over a week)! I'll also try to pick up the 30 Day Photo Challenge again tomorrow.  And then on Sunday, I have auditions for Almost, Maine at Baton Rouge Little Theater, which I'm both really excited and really nervous about!  I haven't done any theater in about a year, so I'm excited to do any sort of acting, even an audition!  But I'm also nervous because I haven't done it for so long and I really want to do this show!  Fingers crossed that it goes well!

It feels so good to have this semester and finals over and done with!  It feels so great to be able to go to bed without any school work hanging over my head!

What a Pinteresting Thought!

Pinterest is something that is still relatively new to my life, but it's obvious that I was instantly addicted.  I've already made two Pinterest recipes (and plan on making two more this week)!  It's inspired me to finally learn to crochet!  I've got my future "When I Get Insanely Rich" wardrobe all planned.  I love it!  If you haven't been to Pinterest, you really need to check it out! That is, unless you have something really important on your agenda.  If you have an important agenda, I suggest you wait until you're done with it, because all shreds of productivity fly out the window as soon as you start pinning.

Once again, I'm taking a cue from Mel at Little Mrs. Married.  She knows where to find all of these cute blog link-ups!

I think I'm going to spread this out over a few Wednesdays and devote each post to a specific Pin Board.  Otherwise, I might bombard you with more pictures of buttery, cheesy foods and expensive outfits and perfectly styled homes than a person could handle in one post.  Today's board: Favorite Recipes.

Let me begin my saying that I think my favorite things that I find on Pinterest are the recipes!  Of course they're all loaded with fat. But until I can find an excuse to make these dishes, it's at least fun to look at the pictures and drool.



I've been staring at this bread for weeks.  Haven't built up the courage to make it yet, though.



I see these in my near future.



I love fried okra, but it's unfortunately only a "sometimes food."  But this oven-fried version looks worth trying!



So. Much. Cheese!



Yumm!  Bread topped with Spinach and Artichoke Dip!


This dip is all over Pinterest.  It's called "Crack Dip" because it's supposedly so yummy it's addicting.

Sidenote: I actually got to make crack dip tonight!  The people at the grocery store didn't give my bag with the dressing mix or the chips (so frustrating!), so I improvised and used ranch dressing and cut back on the sour cream.  I definitely want to try it again the right way, but even before sitting for 24 hours, it was still damn good! Pictures to come tomorrow (maybe)!


It seems like every time I bake I'm calling my mom and asking her about some sort of measurement conversion, so this will be really helpful too!

5-in-1

I have quite a bit of catch-up to do on the 30 Day Photo Challenge.  Silly holidays got in the way of my picture taking.  I promise it won't happen again :)  And no, of course I don't have my fingers crossed behind my back...

So, let's get started.

Day 16: What I Ate

I completely forgot to take pictures of my food on Day 16.  So instead, I'll show you what I made for breakfast on Thanksgiving morning!


Pumpkin pancakes—another Pinterest recipe!  I would give you the recipe, but I want to try to make them one more time before I do.  They tasted great, but the texture was kind of off.  They were kind of heavy and didn't rise at all.  I'm not sure if that's due to a problem with the recipe or to the fact that our baking powder wasn't as fresh as it could have been.  Once I've tried it with newer baking powder, I'll let you know if the recipe is one worth sharing :)

Day 17: On the Shelf!

I love my bookshelf!  It's so nice and neat and organized!
Top Shelf:  Most of the books that I keep at my apartment.  I have waay more at home.  There's also a picture of my parents at the beach and a piece of driftwood that I found on a walk with my mom my last morning at the beach this year.  On top of the bookshelf is a picture of the 2008 cast and crew of Dracula at Baton Rouge Little Theater and a picture of all of the winners from the 2010 BRLT Beaux Arts Ball—the year I won Best Supporting Actress in a Play!
The next two shelves:  My DVDs (This is the majority of my DVD collection) and a picture of my grandparents.  The lower shelf holds my the entire series of Gilmore Girls and Lost on DVD.  The picture is of my friend Ronald and I.  The picture is from the Baton Rouge Little Theater's 2010 production of Private Lives in which Ronald played my husband.
And the bottom two shelves:  The top shelf holds my books that are too tall to stand up (including the Lost Encyclopedia, The Paddington Treasury, The Annotated Alice in Wonderland, Apartment Therapy, and a book about lefties that my mom got me at a garage sale), Scrabble Slam and Phase 10 card games, a brick from the beach house that my family went to every year until Hurricane Ivan destroyed it and my photo album.  The bottom shelf holds extra notebooks, all of my music and my textbooks.

Congratulations! You are now an expert in my bookshelf!  I'm always really interested in things like what other people keep on their bookshelves and in their kitchens and on their walls.  I think it's a really neat glimpse into someone's life that can tell you a lot about them.

Day 18: In My Bag

This is another thing that really fascinates me—what other women keep in their purses.  Sometimes it inspires me to keep my purse neater; sometimes it makes me feel slightly less psycho when I see that other women's purses are just as black hole-ish as mine seems to be. 

At this very moments, the contents of my purse include:
A headband, assorted medicines, contacts lens drops, glucose tablets, lip balm, lip gloss, lip stick, a CVS receipt, a pen, my eyeglasses, two packets of tissues, my iPhone, my iPod, earbuds, a compact mirror, my sunglasses, iPhone charger, wallet, various coupons, a tin of Altoids and a pack of gum.  

Normally my keys would be in there too.  I know it seems like a ton of stuff, but it's all essential, I promise!  And my purse is deceptively huge.  It may seem like a lot of stuff, but once you put it in my purse there's still a ton of room left.

Day 19: Where I Slept

Okay, this isn't actually where I slept on Day 19.  I actually slept at my parent's house.  But my bed at my parent's house is messy and has mismatched sheets and blankets.  My apartment bed, on the other hand, is nice and neat with color coordinated comforter, quilt and pillows.  You would have chosen to post the apartment bed too :)

This also gives me the chance to show off one of my favorite things in my room: my framed poster of Georges Seurat's A Sunday Afternoon on the Island of La Grand Jatte.  Have you seen Stephen Sondheim's Sunday in the Park with George?  You really should, especially if you're an artist, performer, musician, etc.  If you've seen that musical, you'll understand why I love that painting so much.

And finally, today's picture!  Day 20: What I Read

I don't have time to read any sort of "for myself" book.  All I have time for is textbooks.  I know, sad.  But I do have a list of books I'm planning to read once school is out including The King's Speech and Jaycee Dugard's memoir.  But until then, all of my "for fun" reading is in blog form.  So today, I'll share a few of my favorite blogs with you!

First off is my friend Mel who writes Little Mrs. Married!  Mel is always so sweet and optimistic and funny and her blog is so cute!  I also get some cute blog ideas from her, like those fill-in-the-blanks!

Next is Marriage Confessions!  I have not personally met Katie, who writes it, but I bet if we were to meet, we would get along swimmingly!  She writes about her marriage, her children, her difficulties with baking, her family, everything!  And she's a fellow redhead!  She's really honest about her life and seems to have very similar viewpoints to mine when it comes to things like parenting (I know, I'm no where near that point yet!  But I want to be ready and it's never to early to have opinions about that kind of thing in my opinion!).  I've been reading blogs and articles about parenting lately because I'll be working a lot with parents in my future work as an Early Intervention SLP and I think it's important to try to understand as best I can all of these aspects of parenting and the decisions that parents have to make and what goes into those thought processes, especially because the children I'll be working with are so young (Birth to 3). I feel like I get a lot of insight into that on Katie's blog.  

Next is Bakerella!  Like I've mentioned before, I discovered how much I love the kitchen once I moved into my apartment and I'm working of "re-discovering" that love.  Bakerella is adorable and is the master of Cake Pops (which I will be making in the next couple of weeks!).  And she has so many cute recipes that I'm dying to try!

And finally, PostSecret! If you've been living under a rock and have never heard of PostSecret, the basic concept is that people from all over the world write their secret on a post card and anonymously mail it to Frank Warren, the man behind Post Secret.  Every Sunday, he posts a handful of secrets on the PostSecret website.  PostSecret is more therapeutic than anything else.  We all have our secrets, things we only tell those we are most close to (or maybe not even them).  They may be tiny and seem insignificant, or they may be huge and painful to carry around.  I've never sent a physical postcard to Frank, but I have posted on the PostSecret app and it's very releasing to just put your secret out there for everyone to see.  And I've on more than one occasion come across my own secret on PostSecret.com written in someone else's handwriting.  If you haven't been to PostSecret, you really should check it out!

Well, there you have it!  Now that Thanksgiving has passed, I should do a lot better about keeping up with this photo challenge!  That is, until Christmas madness kicks in...
My dad and I put up the Christmas tree in my apartment today.  Holiday Spirit has been hard to come by for me this year, but I must admit that I felt a twinge of some sort of spirit as we decorated the tree.

And this is just a picture of my cats because they were getting along for once and eating peacefully next to each other.  A rare occurrence for these kitties.

Woof Woof!

It's official: I am absolutely, positively, head-over heels in love with Pinterest.  It appeals to the most domestic, stylish, crafty, bake-tastic aspects of my personality.  If you haven't been on Pinterest, you should definitely check it out after you read this post (because if you go before you're done reading, you'll get sucked in and there's no way you'll ever think twice about coming back here)!!

Some of my favorite finds on Pinterest are all of the recipes!  I've got a Pin board devoted to nothing but fattening, delicious recipes that I'm dying to try (I just need a few victims!...er...tasters!).  Remember my blog post about making Red Velvet Cakesters?  I found that recipe on Pinterest!  I can spend hours just looking at all of the food on Pinterest.  And sometimes, I do...

If you're a fellow Pinner, you might recognize this recipe I tried last night.  Different variations of it are all over Pinterest and last night I finally gave in a tried it.  Last night, I made Puppy Chow!


Despite it's canine friendly name, this is definitely not a snack for your pooch.  It is sweet, chocolately, peanutty, 100% people food. And so easy to make!  Start to finish, it didn't take me more than 20 minutes to make a huge batch. And it would have taken even less time if I had a 2 gallon bag like the recipe called for (more on that later).

I decided to make the classic, "Chex official" recipe.  First you melt together semisweet chocolate, peanut butter, and butter (I used crunchy peanut butter because that's what we had in the house.  I loved the little peanut bits mixed in with the chow!).  Oh...and the recipe calls for you to add vanilla to the chocolate mixture after you melt it, but I kind of sort of completely spaced and forgot to do that. Oops! So, if you're one of those awesome people who remembers to follow the recipe, you would add vanilla here. If you're like me, you just pretend that vanilla doesn't exist and completely ignore what the recipe calls for. :)
 Then you dump it all over 9 cups of Chex cereal.  You can use rice, corn, wheat or chocolate Chex (or all 4 if you're feeling adventurous).  I used rice Chex (which are gluten free!).



Mix it all together as gently as you can.  Some pieces are going to break.  It's unavoidable.  But the goal is to have more whole pieces than broken pieces once you're done mixing.


 Then the recipe tells you to put it all in a 2-gallon zip-loc bag.  But really, who just has a 2-gallon zip-loc bag on hand?  So I put half of the mix in a one gallon bag and it worked fine.  Put 3/4 of a cup of powdered sugar in your 1 gallon bag and shake like crazy!  Repeat with the rest of the mixture.

 Pour it all out onto a wax (or parchment) paper lined cookie sheet so it can cool and set and there you have it!  Home-made puppy chow!

Warning: If you make this recipe, make sure you have people to share it with, because this stuff is super addictive!  And this recipe makes a ton of chow!  You definitely do not want a full recipe of this stuff sitting around.  You'll just find yourself grabbing another handful every time you pass by until it's all gone.  And your tummy will not be pleased.  Just trust me on this.

So, if you have 20 (or 15 if you happen to have a 2-gallon zip-loc bag lying around.  Where would you even find one of those?!) minutes to spare, I definitely recommend you make some Puppy Chow!  And then I recommend you find someone to share it with! 

Puppy Chow
Prep Time: 15 minutes
Start to Finish: 15 minutes
Makes: 18-1/2 cup servings
Ingredients:
  • 9 Cups Rice, Corn, Wheat, or Chocolate Chex Cereal
  • 1 Cup Semisweet Chocolate Chips
  • 1/2 Cup Peanut Butter
  • 1/4 Cup Butter or Margarine
  • 1 Teaspoon Vanilla
  • 1 1/2 Cups Powdered Sugar
Directions:
  1. In a large bowl, measure cereal. Set aside.
  2. In a 1 quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir.  Microwave about 30 seconds longer or until mixture can be stirred smooth.  Stir in vanilla.  Pour mixture over cereal, stirring until evenly coated.  Pour into a 2-gallon resealable food-storage plastic bag.
  3. Add powdered sugar.  Seal bag; shake until well coated.  Spread on waxed paper to cool.  Store in an airtight container in refrigerator.

The Collegiate Weight Battle

Before I moved on campus and started my first semester at LSU, my weight was the lowest it had ever been. I didn't realize it then, but that was so unfair. Here I was with what was probably the best body I'll ever have and I only got to enjoy it for about a month before I was forced onto the college diet. As soon as I feel pretty great about the way I look, it is snatched away from me by Papa John's, Taco Bell, Quiznos, McDonald's and the cafeterias.

I noticed weight gain almost immediately, which freaked me out. I was really heavy when I was younger and even though I lost about 30 pounds through Weight Watchers, I never lost that weight anxiety. And that anxiety is running in full force now that my only options are fast food and things fried/covered in fat/covered in butter at the cafeterias.

So, I started tracking. I found this really great free app on my iPhone called My Fitness Pal. It's a daily calorie/nutrition tracker that gives you a daily caloric intake goal based on how much you weigh, how much you want to weigh, and how fast you want to lose it. And it's got a huge database of foods. It's, in my opinion, the perfect wight loss aid.

Except I have the self control of someone with very little self control and keep forgetting to update it. So here's where this blog comes in. I discovered a new feature on the website today: the weight loss ticker. So from now on, this ticker will be at the bottom of all of my blog posts. Maybe if know my readers (I recently discovered the stats section of Blogger, there are actually a few of you out there!) can see how much I am (or am not) losing, that will keep me motivated to keep track. My fear of judgement will remind me that I cannot get of track!!

Once again, I'm not sure if any of what I just wrote makes sense, but it is what it is. I'm fat. I want to not be fat. I'm bringing my blog into the equation.

Misery Loves Company

And so here I am. Good ol' misery looking for some company in the blogosphere.

I had a bit of an emotional shake-up this past weekend. I won't go into the gory details, but I was forced to face a reality that I had been avoiding with every fiber of my being. And it kind of came out of the blue. I knew it was coming. And (for the most part) I shouldn't have been surprised. But still, it caused quite the meltdown for me.

I am a creature of habit. I like my routine. I don't take too many chances. I'm not the girl taking mystery shots and vomiting in trash cans in Tigerland on a Thursday night. I like familiar things and people. And I'm happy that way. So sudden change freaks me out. Sudden change that I do not want shuts me down.

I am not one who is comfortable crying around others. I think part of it is that I don't want other people worrying about me. It makes me feel guilty. I think the other part of it is that I think I'm a hideous cryer. I turn red and my chin scrunches up and it's not pretty. Save for family, I can count the people I've cried in front of on one hand. And they don't even fill up that one hand. So when I go through an emotional shake-up such as this one, one of two things happens. I either a) act like a baby and cry hard until I've exhausted myself to the point of sleep or b) become numb to every thing around me and stare at the ceiling until I've stared myself to sleep. And when I wake up and realize that what happened was real and not a dream, I act like a baby and cry hard until I've exhausted myself to the point of more sleep. This past go round, I went with choice B. It's best I have a few days to live out this phase. I just need some time alone to mope and sleep and cry. Plus, when this phase is cut short, it just makes phase two last longer, which is bad.

Why, you ask?

Because phase two is food phase. This is the phase when I tell myself that I can't feel much worse, so I might as well make myself fat while I'm down. This go round, my shut down phase was cut short thanks to school and being at home where parents expect you to get out of bed at some point during the day (though I think they sensed something was wrong and for the most part just let me be. They didn't question me when I announced at one that I was going to the most expensive grocery store in town for Ice Cream. They didn't question me when I was back in bed by 2:30. They let me sleep until I woke-up on my own at 5:30. The only time they expected anything of me was when my grandfather came over for dinner). But I was back at school today and had to wake up and stay awake and not cry during philosophy. So lots of food. Yesterday, I ate half of a Raising Cane's three finger combo, almost an entire bag of Extreme Cheese Goldfish, half of a piece of Lasagna, and a pint of Vanilla Bean Ice Cream. Today? About 10 Reese's cups, a bag of Lay's potato chips, half of a Papa John's personal pepperoni pizza with a container of garlic butter, two Swiss Cake Rolls, and about 40 ounces of Coke. REAL Coke. I never let myself drink real coke. And I'm strongly considering ordering Jimmy John's.

And nothing tastes right. In the past two days, everything I've eaten that one might consider somewhat real food has tasted funny. Thus the half eating Cane's meal, lasagna, and pizza.

Oh, and my teeth hurt. Because I manifest my emotions in my jaw. Which mean lots of unintentional teeth clenching the past couple of days.

Other people cope differently with shake-ups and some think I should be dealing with this differently. My roommate, for example, is trying to convince me to go down to New Orleans with her and our friends for Mardi Gras this weekend. She believes I need to hit rock bottom so that the only way I have to go is up. I can think of a lot of ways that can go horribly wrong.

I really have no idea why I just wrote this blog post. If I were thinking rationally, I would probably not click the "Publish Post" button. But I'm not, so I will.

Maybe this is supposed to be therapeutic? I think I just needed to write down what I'm going through so that I can try to understand the cluster fuck that is my mind right now.

And I'm comfortable posting this because I don't think that anybody is actually reading this blog. When I was little, I used to line up my stuffed animals and barbies and talk to them and put on little shows for them. I kind of see my blog in the same way. I'm just writing this out for my stuffed animals and Barbies. I don't really expect any one to read this or really care about this.

That being said, if you are a real person reading this blog, now is not the time to tell me.

One good thing that happened this weekend? I discovered a new chapstick thanks to my friend Caroline. Or maybe it's a chap ball? A lip ball? A balm ball? It's called the Eos Lip Balm Smooth Sphere.



I have the yellow one, which is called Lemon Drop. Like the Nivea Lip Stick I mentioned in my last blog post, it goes on smooth and doesn't really have a taste, but on top of that, it smells good and the shape makes it easy to find in my black hole of a purse.

Ok, that's all I got. I should probably try to get some schoolwork done before I turn into a pumpkin. A sad, pathetic, fat pumpkin.
